Chicken Satay Lettuce Cups - A low carb, easy recipe that will promise to light up your mid week!


Serves 2

1 large cooked chicken breast, cut into pieces

4 mushrooms, sliced

1 zucchini, grated

1/2 red capsicum, diced

1 tablespoon of crunchy peanut butter

60ml coconut milk

1 tsp soy sauce

turmeric

chili flakes

Baby Cos Lettuce hearts, washed


cook the mushrooms, zucchini and capsicum with some olive oil in a medium pan until soft. Add the diced, cooked chicken and the sauces. Sprinkle Turmeric and chili flakes, salt and pepper to taste. Serve in lettuce cups.
